Southern Fried Chicken

This is a super crunchy chicken with just the right kick of spicy.

Ingredients - Feeds 4

Chicken pieces 1 ½ Kg
Flour 2 Cup
egg 1 Each
water 1 Cup
salt & pepper a Pinch
dried sage a Pinch
Crying Boy Peri Peri Sauce 75 Ml
Sunflower Oil for frying 1 ½ Litre

How to Prepare

1 Break the egg into a mixing bowl, then add 1 cup of water - 1/2 cup of flour and the Crying Boy Peri Peri sauce, whisk until smooth, the thicker you make the batter the harder the outside will be, play around with that if you like

2 Mix the rest of the flour with the salt, pepper and sage in a separate bowl.

3 Add the chicken to the batter and coat fully.

4 One piece at a time, place the chicken pieces in the flour and coat fully, then place the piece on the side to rest for 10 mins.

5 Cook the chicken in a deep fryer or pot with enough oil to cover them at a medium heat, any where from 130C to 160C cook for 25 - 30 min.

6 Once cooked allow to cool then enjoy with extra Crying Boy Peri Peri sauce.
